Where does the company name come from?

From the Office installation that created the document. It persists through copies and edits, which is why old employer names surface in files years later.

Does this show tracked changes?

No. Tracked changes live in the document body, not the metadata. Review them in Word.

How do I clear these fields?

Run the file through Remove Word Metadata, which clears them while preserving your content.
