Will the HTML be mobile friendly?

Not automatically. It reproduces the fixed PDF layout, so plan to restyle if the content must reflow on small screens.

Should I use this or PDF to Markdown?

HTML when you want the visual layout preserved. Markdown when you want clean structured text to edit and re-style.

What about scanned PDFs?

There is no text to extract from a scan. Run PDF OCR first.
