Cropping a PDF does not delete anything; it changes the crop box, the rectangle that tells a reader which part of the page to display. The content outside it stops being shown but is still in the file, which is why the operation is instant and why the text inside stays selectable and sharp at any zoom. Automatic white-margin removal measures where ink actually starts on each page and sets the box just outside it, so pages that were scanned slightly differently still end up trimmed sensibly.
Where it stops: Because the content is hidden rather than removed, anything cropped away can be recovered by someone who knows to look, and the file does not get smaller. This is the wrong tool for taking confidential material off a page: use Redact PDF, which removes it. Applying one crop box to every page assumes the pages are laid out alike, so a document that mixes portrait and landscape needs its pages done in groups.
